Thai tea (also known as Thai iced tea) or “cha-yen” (Thai: ชาเย็น, lit. “cold tea”) in Thailand, is a drink made from strongly-brewed ceylon tea. However, due to ceylon tea’s high price, plain black tea with added food coloring is commonly used. Other ingredients may include added orange blossom water, star anise, crushed tamarind seed or red and yellow food coloring, and sometimes other spices as well. This tea is sweetened withsugar and condensed milk and served chilled. Evaporated milk, coconut milk or whole milk is generally poured over the tea and ice before serving to add taste and creamy appearance.
What We need:
For the Brew:
1 Tbsp Black Tea/ Darjeeling Tea
sugar to taste
Dairy for the topping:
1 cup regular or coconut milk
1/2 cup sweetened condensed milk (Milk Maid or Mithai Mate)
How to make:
1. Put the spices in water and boil them. Add tea and boil again for 5 minutes. Remove the tea leaves and spices by straining the mixture. While its hot, add sugar until dissolved and let the mixture reach the room temperature.
2. Fill tall iced tea glasses with ices and pour in the tea mixture till its 3/4th full. Slowly top off glasses with 2 tbsp condensed milk, followed by coconut milk without stirring.
3. Garnish with basil leaves and serve.
