Fruity Pesto Salad

1Salads are ready to eat dishes prepared with healthy ingredients to serve the best. Salad is a word nowadays used to describe a light and leafy fruits and vegetables based dish which is prepared using a dressing.

Salads are majorly served cold except a few like south German potato salad. Green leafy vegetable salad dishes are generally served with some dressing or sauces accompanied by nuts or croutons and with additional ingredients like cheese, eggs, pasta etc.

Today I tried my hands on mixing the pasta with some fresh fruits and lovely black olives to form a cold salad. Becoming a part of Italian cuisine, this salad makes us have a lot of fruits together with a filling ingredient i.e. pasta.

 Calories/serving: 143                                                                                                                                Serves 4


2 cups whole wheat pasta

2 tbsp sliced black olives

1/4th of an apple diced in small cubes

1 orange

For Pesto:

2 tbsp Olive Oil

1 cup fresh washed basil leaves

1 tsp crushed garlic

¼ tsp oregano

¼ cup walnuts

Salt & pepper to taste

2 -3 tbsp milk



  1. Boil around 8 cups water with 1tsp salt. Add the pasta and let it boil for 10-12 minutes. Check it and remove from fire. Drain the water and drizzle it with some olive oil.
  2. In a mixer, blend oil, basil, garlic, oregano and walnuts until it becomes a smooth paste. Add milk to get a thick consistency. Add salt & pepper.
  3. Now, toss the pasta in this coating dressing, season some salt & pepper. Cover it with a foil and refrigerate it.
  4. While serving, toss the pasta with fruits and serve. In case it appears a bit dry, add 1-2 tbsp water in it.
